Aged in Oak was born out of the pursuit of great whiskey. After developing a palette for bourbon, Doug and his son enjoyed hunting for their next bottle together, creating memories and meeting new friends over rare finds. During a conversation with Doug’s construction partner, James, a bold idea emerged—to create a platform that captured the thrill of discovery and brought people together.
Over dinner at The Chatterbox in Long Grove, the vision took shape. As builders by trade, we renovated the space ourselves and brought the building to life. We opened our doors in May 2025, and we can’t wait to see where the journey takes us next.
